Tapioca starch is used in baking and makes especially good flat breads being a perfect substitute for maize or corn flour. Its a popular thickener and stabilizer being one of the primary ingredients in "Skips" crisps here in merry old England.
Its popular as its versatile, adding chewiness to baked goods and crispiness to crusts. It blends very well with most ingredients, not adding to much to the flavour so you're not stuck with savoury recipes only...Word on the street is that it makes wonderful Custards, ideal for thickening Desserts!
Its also an ideal addition to the arsenal of any baker making fantastic breads and sponges. It can be easily mixed with other gluten free flours so you can really fine tune its application and use it as you would any other flour.
